Olympic Themed Cupcakes




Here is a video tutorial of how to make Chocolate Cupcakes. The recipe makes 12-15 cupcakes, if you want to make a cake just double the ingredients!

To decorate your cupcakes cover with white icing and add five M&M's that represent each ring of the Olympic Flag!



Chocolate Cupcakes - Makes 12-15 Cupcakes

Ingredients:

1 cup flour
1 cup sugar
¼ cup cocoa powder
2 teaspoons baking powder
A pinch of salt (optional)

1 egg
½ cup milk
¼  cup oil
½ cup hot water (if you can't use hot cold water is fine)

Method:

  1. Preheat your oven to 180C.
  2. In a large bowl, sift the flour, sugar, cocoa powder, baking powder, baking soda and salt.
  3. Add the egg, milk, oil and vanilla essence and beat with a fork for about two minutes.
  4. Add the boiling water and mix until combined.
  5. Pour the batter evenly into the cases, around ¾ full.
  6. Cook in the oven for 10-15.
  7. Let the cupcakes cool completely before covering with icing.


Easy Vanilla Icing

1 cup of icing sugar
2 tablespoons of butter or margarine, softened
1 tablespoon  of milk
1/2 teaspoon of vanilla essence

Combine ingredients in a small bowl and mix with a fork until smooth and fluffy.

    Thank you Miss Ouano, for posting that great movie about making cupcakes. i was very lucky to have tasted the yummy chocolate cupcake from Jordenne in Room 13, and it was delicious!. So, guess what I might be doing this weekend? That's right - making some scrumptious chocolate cup cakes.
